Stonehaven ‘Rat & Bull’ Chardonnay-Viognier
Wrattonbully, Australia, 2005
The Rat & Bull Chardonnay Viognier has distinctive, flinty nose of fresh
lemon, orange and stone fruits with nut characters and creamy oak.
90% fermented with native yeasts in French oak barriques, the resulting
wine displays intense citrus and stone fruit alongside creamy, malty and
nutty characters. A mouth filling wine displaying excellent length and
amazing texture.

Bays of Fire Tigress Sauvignon Blanc
Tasmania, Australia 2005/6
An intense palate of lemon and herbal gooseberry fruit flavours, with
good length and a spicy, clean finish and crisp acidity. The coldest
viticultural sites in Australia are to be found in Tasmania. These
conditions combine to produce fruit of delicacy and incredible intensity.
Sauvignon Blanc is one variety that does particularly well in this region,
and this very cool climate enables the retention of maximum flavour. A
fantastic wine with seafood and mildly spicy dishes.

Glen Carlou Chardonnay
Paarl, South Africa 2004/5
A rich buttery Chardonnay from one of South Africa’s leading estates
located in Paarl. A wine which has powerful, ‘new world’ tropical fruits
character backed by layers of vanilla oak. Glen Carlou was established
in 1985 by Walter Finlayson who has built it up to become one of the
best estates in the cape, producing superb wines which have great
elegance and power.

Louis Jadot Chablis
France, 2003/4
A fuller style of Chablis, still typically bone-dry, but also with a
well-rounded finish and subtle hints of toasty-vanilla oak flavours.
Jadot allow their wine to undergo a partial malolactic fermentation
which gives the wine a softer, creamier style. The oak-ageing for 6
months is more typical of the Côte d'Or than most Chablis.

Leasingham Riesling
Clare Valley, Australia, 2004/5
The Leasingham Riesling shows intensely lifted citrus spice with fresh
lime and jasmine flower aromas. On the palate, punchy, citrus fruit
concentration is balanced with mouth-watering mineral acidity.

Sant’ Helena Pinot Grigio Collio
Vigeti Fantinel, Italy, 2004/5
From estate of Fantinel in the prestigious Collio this region creates a
complex Pinot Grigio. Showing wonderful aromas of freshly dried hay,
almond, pear and pineapple followed through with a rich, honeyed style.
With its perfect micro climate allied to an outstanding terroir makes for
one of the finest Pinot Grigio in Italy.

Red Reserve:
Stonehaven ‘Rat & Bull’ Cabernet-Shiraz
Wrattonbully, Australia, 2002/3
This wine is sourced 100% from the Wrattonbully subregion of South
Australia’s Limestone Coast. This new and exciting area is now
producing some of the best fruit in the entire region. The 2002 growing
season was cool and low yielding and it delivered something most
unusual – the Cabernet and Shiraz ripened at the same time in
Wrattonbully. This meant that a portion of Shiraz and Cabernet fruit
made acquaintance early in the winemaking process, enjoying cofermentation
in open fermenters, resulting in an integrated wine from the
very start. A great food wine – for red meat dishes, pork and pasta.

Bays of Fire Tigress Pinot Noir
Tasmania, Australia 2003
Complex and premium Pinot Noir with aromas and flavours of ripe
cherry and raspberry, silky tannins with good length – an elegant and
varietal wine. Sourced primarily from the Tamar River sub region of
Tasmania, slightly warmer sites allow for some riper, sweeter fruit
characters. A great match with pasta, red meat, Asian dishes and lamb.

Bonterra Organic Zinfandel
Mendocino County, USA, 2003/4
Fetzer vineyards are the world’s leaders in the development of organic
Viticulture. Their aim is to farm grapes without the use of pesticides,
insecticides or synthetic fertilisers. Deep purple in colour, with a
wonderfully rich, spicy palate. Sourced from Home Ranch, together with
the grapes from Blue Heron and Clock Springs vineyards.

Glen Carlou Syrah
Paarl, South Africa 2004/5
A rich, dense wine with a strong, spicy blackberry and mulberry flavour
mingled with layers of toasty oak. Glen Carlou was founded in 1985 by
Walter Finlayson who turned it into one of the finest and leading wine
estates in South Africa. Shiraz is a relative newcomer to the Cape but is
rapidly proving to be capable of producing some of the best red wines
from South Africa.

Torres Atrium Merlot
Spain, 2004/5
From 100% Merlot sourced from vineyards which form part of the
Agulladoic estate. Matured for six months in French oak, the wine is
deep coloured, with soft juicy fruit flavours and typically soft, round
tannins.

Barolo I Siglati, S. Orsola
Italy, 2001/3
One of the great red wines of Italy produced from the Nebbiolo grape in
the Langhe hills of Piemonte in the Southwest. Rich and powerful with
attractive aromas of tar and violet, and a tremendous weight of fruit on
the palate, it is ideal with rich roast meat dishes. Aged in large
casks for at least two years, to develop complexity and smoothness on
the palate.

Keeping up with the Hamiltons
Exclusively at hamitons bar & kitchen: two shots of lemongrass infused
smirnoff black, mixed with a squeeze of fresh lemon juice and
elderflower cordial topped up with ginger ale.
Bramble
Tanqueray gin shaken with fresh lemon juice and crushed ice, finished
with a drizzle of crème de mure and fresh raspberries … simple and
sweet.
Hamiltons Bloody Mary
Traditionally made with a special hamiltons twist: two shots of smirnoff
black mixed with sweet chilli sauce, fresh basil leaves, spices, a dash of
red wine and tomato juice.
Japanese Slipper
Traditional tequila shaken into a froth with midori, a squeeze of fresh
lime and pineapple juice, served in a chilled martini glass.
Espresso Martini
This is a must have for all the coffee lovers out there, two shots of
smirnoff black shaken with a fresh shot of espresso and a shot of
kahlua.
Pink Mojito
A mint infused double bacardi gently shaken with fresh lime juice and
topped with cranberry juice. Fresh and delicious.
Apricot Fizz
Two shots of johnnie walker black shaken with apricot juice and a dash
of apricot liqueur topped with ginger ale to create a dry yet sweet
cocktail.
Markee
Buillet bourbon gently mixed with cranberry and fresh lemon juice,
served over crushed ice and drizzled with chambord.
Southern Drop
Fresh and clean, double southern comfort muddled with cucumber and
shaken with fresh lemon juice. Served short and poured over ice.
